Paddy

New Middleton distillery (1843)

Paddy whiskey is made at the Midleton distillery. It was originally made at the Cork distillery. It is named after a local whisky salesman, Paddy O’Flaherty.
Paddy Old Irish is one of the few Irish whiskeys made with technology similar to Scotch whisky, with a smoky aroma from peat, following a recipe from 1779. It matures in sherry, bourbon and rum casks. It was originally sharp and very heavy, but gradual development has made it far smoother and lighter. The pure malt used in its production is the lightest of all the malts used in the Midleton distillery. On the other hand, this softens the typical flavour that spirits made in a pot still have.
